Vineyard owner Leon Chen and Red Head Ranch present this second release of Old Bailey Vineyard 100% Cabernet Sauvignon. Deep, bold fruit from the steep, limestone hillsides west of Paso Robles. Only 150 cases produced of this very special wine!

Winemaking
Hand harvested grapes. Fermented in a closed-top stainless steel tank with aerative pump-overs performed twice a day. After an extended maceration for 10 days post-dryness, the wine was pressed from the skins and aged 24 months in 100% new French and Hungarian oak barrels from Seguin Moreau, Vicard, and Trust International.
Bottled unfiltered on October 2, 2006.

150 cases of 750 ml.

Tasting Notes
Deep and saturated in color, this robust and full-bodied Cabernet Sauvignon exudes flavors of raspberry liqueur, blackberry, and sweet herbs complemented by subtle notes of Belgian chocolate, leather, and graphite. The wine is generously oaked, characterized by classic aromas of cigar box and Christmas spice. The well-integrated oak profile not only complements the bouquet, but also provides structural support for the dense fruit flavors. This rich and complex wine is enjoyable immediately, but is also worthy of cellaring for several years.

The 2004 RHR Old Bailey Cabernet Sauvignon won a Double Gold medal in the 2007 San Francisco Chronicle Wine Competition.
